Infused Honey Chocolate Chip Cookies

These light cookies have a scrumptious sweetness that makes you crave more. Although they require a bit more attention than other cookies, they are well worth the effort. In essence, lower temperatures and less mixing are necessary.

Ingredients

  • 1/2 cup canna butter or canna margarine, softened
  • 1/2 cup creamed honey
  • 1 large egg
  • 1/2 tsp vanilla
  • 1 1/4 cup (minus 2 tbsp) all purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 3/4 cup chocolate chips

Instructions

  1. Preheat oven to 325° F.

  2. Cream together canna butter and honey until smooth. Add egg and vanilla and beat until fluffy.

  3. Measure flour, salt and baking soda into a separate bowl. Mix thoroughly. Stir into creamed mixture until blended. Do not over mix.

  4. Stir in chocolate chips. 

  5. Using an ice cream scoop, divide batter into 12 equal portions. Space equally apart on 2 parchment lined baking sheets.

  6. Bake each sheet separately at 325° F for 22 minutes. Cookies may appear under baked at this point. However, they will continue to cook while cooling off. Allow the cookies to cool completely on the baking sheet, approximately 20 minutes.

Check For Doneness

If you look in the oven and your cookies look like they are done, you left them in the oven too long. Unless you enjoy the taste of burnt cookies, you should take them out when they look slightly underdone.
